Lemon Bark

This was in a gift basket and it was divine. Very different and I think you will like it.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Melt white chocolate in microwave till liquid and smooth.
  2. 2
    Add broken lemon drops and mix gently to combine.
  3. 3
    Pour onto cookie sheet and spread to about 1/4 inch or so thickness (I always line it with parchment!).

    Allow to cool until hardened and break into pieces.
  5. 5
    Enjoy.

I was hoping I could give this a higher rating, because DH loves white chocolate. He said he liked it, but it was much too rich. I think it needs more lemon pieces to balance the richness of the white chocolate. I'll make it again and be sure to add more pieces, because the idea behind this candy is excellent.

    this was a big hit. I used Ghiradelli white chocolate from Trader Joe's and Lemonheads candies. Two of my neighbors asked for the recipe!

    Awesome! I used to buy this from a little frufru shop till I started making it myself. I like the candy well-crushed but not pulverized. Orange hard candy and lime hard candy are delicious as well and an assortment of the three is quite attractive in any gift basket. Thanks, RiffRaff, for posting!

    I admit that I was a bit curious, even uncertain, about this but have never gone wrong with one of Riff's recipes yet so I decided to try it. **Wow** I've been trying to think of adjectives for this, but they all fall short. It is creamy and tangy at the same time, sweet and yet with a zing to it....simultaneously simple and complex. Neither the chocolate nor the lemon are overpowering, but balance each other out perfectly. (I used Ghiradelli white choc chips.) It was very easy to make but tastes decidedly gourmet. It's a nice change from the heavy sweetness that seems to abound at the holidays ~ kind of like a sorbet palate cleanser on your cookie tray, lol. Next time I will get the chocolate a bit warmer when I melt it as it cooled down pretty quickly when I added the lemon drop bits and perhaps didn't spread as easily as it would have otherwise. I got roughly a 9x13" piece of bark; next time I will plan on making a double batch as I can already tell this is going to be a big hit. Thanks SO much for posting this, Riff, and making me look good for the holidays, lol!
