Colored Coconut Flakes

Recipe #120969 | 5 min | 5 min prep | add private note

There are endless uses for this decorative topping... It's fun to put around individual servings of fruit salad or ambrosia. At Easter, I made a cake in the shape of an egg, and used the colored coconut flakes as "Easter grass" around the cake. I've also made carrot cake in the shape of a carrot, and used green coconut flakes to make a decorative pretend carrot top. You can also make a "fluffy" or "furry" cake by putting the colored flakes on top of the cake's frosting. I'm sure you'll think of many more ways to use it!

1 cup colored coconut (change servings and units)

Ingredients

Directions

  1. 1
Put the coconut in a ziploc bag.
  2. 2
Dissolve a few drops of food coloring in the teaspoon of water, then pour this colored solution over the coconut in the bag.
  3. 3
Seal the bag and shake until all coconut is uniformly colored.
  4. 4
Tip: if you make primary colors first, you can use any leftover of that color to make a secondary color (e.g., if you have leftover yellow coconut, add red to make orange).

I used this for the grass on my golf course birthday cake. I used green food coloring and just added enough to get the color I wanted. Thanks for posting, this was a life saver!

This is such a fun and easy way to help achieve a festive look. I usually only think of it at Easter, though, and always make "grass". I have decorated many Easter desserts with it over the years, but need to remember other colors and occasions as well. I sometimes get a little heavy-handed with the food coloring, so when it will be touching something I don't want the color to bleed onto, I spread it out and let it dry a bit before using. There may be many who haven't thought of this simple way to add a little visual interest, so thanks for posting!

I used this as grass on top of cupcakes iced with green icing for the superbowl. I used pecans as footballs. Kids loved it.
