This hearty and delicious dish tastes similar to chicken and dressing. I am certain that this would be terrific with turkey also.

SERVES 8 (change servings and units)

Ingredients

Directions

    Brown the sausage with the celery, onion and mushrooms.
  2. 2
    Stir the softened cream cheese into the sausage mixture until well blended.
  3. 3
    Coarsely chop the cooked cauliflower.
  4. 4
    Mix all ingredients and spread in a greased 9"x13" baking dish.
  5. 5
    If desired, dust the top with paprika.
  6. 6
    Bake, covered with foil, at 350º for about 30 minutes.

    Uncover and bake until hot and bubbly and top is lightly browned, about 10 to 15 minutes.

    OH MY GOD!!!! 20 star alert!! With the addition of about 1 1/2t. of dried mixed herbs this really did taste like a chicken and stuffing casserole! I used light cream cheese and reduced fat cheddar and this was still so very decadent I felt positively wicked eating it. My new favorite recipe in my new lifestyle! A few hints....chop the cauliflower VERY well, otherwise you will taste the cauliflower, add some extra herbs, and I used 3 boneless skinless thighs that I had cut into rough chunks and browned in a skillet with some enova oil and garlic. If you are low carbing this is a NOT TO BE MISSED recipe!

    This was absolutely wonderful! I was getting a bit bored with my low carb diet and this perked it up considerably. I used Italian sausage and more celery and onion than called for, but otherwise followed the recipe. It was easy and quick to make and while I relished every bit of my two (large) helpings, I have a feeling the leftovers may be even better. This will be one I make many more times. And not just as a low-carb diet dish. It would be perfect as a potluck contribution, as well. Thanks, Mercy, for sharing such a delicious recipe with us.
