Cilantro Lime Fish

This is a good one for those of us who love lime, since that is the predominant flavor here. Use cod, flounder, or any firm white fish for this. I used Tilapia, and in place of the dried onion I used fresh. I served it with Mexican Tomato Rice and Beans. From Taste of Home's Quick Cooking (September/October 1999).

SERVES 8 (change servings and units)

Ingredients

Directions

    Preheat oven to 375°F.
  2. 2
    Place each fillet on a piece of heavy-duty foil; sprinkle with pepper.
  3. 3
    In a saucepan, saute onion and garlic in oil; stir in cumin.
  4. 4
    Spoon over fillets; sprinkle with cilantro.
  5. 5
    Place lime slices over each; drizzle with margarine.
  6. 6
    Fold foil around fish and seal tightly; place on a baking sheet.
  7. 7
    Bake for 35-40 minutes or until fish flakes easily with a fork.

My other half and I really liked this recipe. I did use fresh onions and used plaice. The lime was fine, despite the other person's comment. I recommend this to people that enjoy eating fish as much as we do.

    Leaving the rind on the lime ruined this. It was so bitter that my DH and I couldn't even finish eating it. I hated wasting good fish like that. I don't this would be bad if the lime juice only was used or even if the limes were peeled first then sliced.
