Korean Spinach Soup

Beef broth may be substituted for the water for a richer soup, but you may have to decrease the amount of salt.

    Wash the spinach thoroughly, then trim off the thick stems.

    Heat the sesame oil in a heavy-bottomed pot.
  3. 3
    Brown the ground beef, separating while stir-frying.
  4. 4
    Add the green onion, garlic, soy sauce, salt and pepper and stir-fry for 30 seconds.

    Add the water, then the spinach.
  6. 6
    Bring the soup to a boil, then lower the flame.
  7. 7
    Place a tight-fitting lid on the pot and simmer for 10 minutes.

A wonderfully light and fragrant soup. The sesame oil really makes this--it reminded me of wonton soup meets my (Italian) comfort soup. I tinkered with the beef broth and the soy sauce to get the right amount of flavor (no added salt needed). I used ground turkey instead of beef and dried onion instead of scallions. I'll definitely be making this again.

    This is a great soup! I was recently put on a metabolic diet and Phase 1 is pretty much only veg and protein. When DR. said to try and do and much "dark green leafy" as you can, i started hunting for spinach recipes. This is an AWESOME soup!! Thanks for posting it.
