French Toast Roll-ups

SERVES 8 (change servings and units)

    In a medium bowl, beat the cream cheese, egg yolk, and 1/4 cup sugar until smooth; set aside.

    Cut the crust off each slice of bread then roll out each slice with a rolling pin.
  3. 3
    Spread the cheese mixture over the bread, distributing evenly.
  4. 4
    Roll up each slice jelly roll-style and place seam side down on a baking sheet.
  5. 5
    In a shallow dish, mix the remaining 3/4 cup sugar and the cinnamon.

    Brush the butter over the roll-ups then roll them in the cinnamon-sugar mixture, until completely coated.

    Repeat with the remaining roll-ups, placing them on the baking sheet after coating.

    Cover and freeze for at least 2 hours, or up to 2 months.

    Just before serving, preheat the oven to 400°F.

    Bake the roll-ups for 10 to 12 minutes, or until golden brown.

These a just great for that quick running late breakfast. I used fat free cream cheese and whole wheat bread. Made me feel a little better about the kids eating more than one. My kids loved to help with the rolling pin. I did need a little more than 3 tablespoons of butter though. Thank you!

    Oh my, these are little rolls of bliss! I used fat free cream cheese and these were so yummy! I only got 9 rolls out of the batch, and I really didn't fill the bread too much. Maybe because I used fairly large slices of bread? In any case, these will now be in my freezer at all times! What a great (almost!) fat free snack for when we feel like something sweet! Thanks!

    My kids wanted french toast for lunch and I remembered these being in my cookbook. My eight year old help trim the crust off using a pizza cutter as I mixed the ingredients, rolled and baked. DELICIOUS! Did two batches both with 1/3 less fat cream cheese with cinnamon and vanilla added to the cream cheese mixture, one with wheat bread and one plain white. Got ahead of myself and baked them all before freezing and thought perhaps nuking them to warm will still have good results.

    These were so easy to make, and DELISH! They will be a staple in our freezer from now on..I divided them into bags of 6 for easy single servings
