Hot German Potato Salad

This was passed down from my Great-Great-Grand Mother who came from Germany in the 1800's.

SERVES 12 (change servings and units)

Ingredients

Directions

  1. 1
    Dice and fry bacon.
  2. 2
    In a small bowl, add eggs, salt, mustard, sugar, vinegar and cayenne pepper.
  3. 3
    Beat well and pour into hot pan with bacon and bacon grease stirring till thickened.
  4. 4
    Add diced cooked potatoes and sliced onion (or onion powder).
  5. 5
    Serve hot.

I made this exactly as directed tonight, omitting the optional onion due to allergy to them. I accidentally overcooked the potatoes — they were rather mushy. This was quite good but very sweet, unlike the variation I recall my German grandmother making. The vinegar is not very prominent. I may reduce the sugar next time I make it, though family liked it as is.

    DH and I loved this Salad!!! My adjustments included making for 4 servings~still using 1 small onion which I sauteed w/ the bacon, draining all but a small bit of the grease, and I only used about 2 T. sugar. I served this hot w/ BBQ Brats 'n Beer, Grilled Cabbage, and German Cucumber Salad with Sour Cream for a wonderful German meal. Thank you for a great recipe!!!

    I just found and made this recipe right away! Used 1/2 cup sugar and followed the rest of the recipe as written. DELICIOUS! The 1/2 cup of sugar was just right! Will be making this recipe along with my cold potato salad for picnics! Thanks for posting!

    Wow! Served this to our American friends when we got back from Germany. They loved it! Like many others I sauteed the onions with the bacon, and decreased the sugar a bit. Served it cold.
