Greek Mushroom Orzo

A blend of mushrooms, tomatoes and orzo with a swirl of feta.

SERVES 4 (change servings and units)

    Heat oil in a large saucepan over medium heat.

    Add mushroom. Cook, stirring occasionally, until tender and mushrooms just release their liquid (about 6 minutes).
  3. 3
    Stir in orzo, tomatoes, chicken broth and water. Simmer covered, stirring occasionally, until orzo is tender and most of the liquid is absorbed (about 9 minutes).

    Stir in Feta cheese and serve immediately.

Wow, KelBel, this was a great side dish. The flavor was wonderful. I made as posted and it was easy to put together and it cooked in no time at all. I will be using this recipe often. Thanks for posting a keeper!

    I love orzo. At the last minute I decided to add the whole can of tomatoes (28 ounces). Cause my orzo was not tender and it began to stick to the bottom. I added also a little bit of water. I omitted the feta cause I didn't have and it's very good. Thanks KelBel Made for Zaar Star Game.

    I just loved the sound of the ingredients and was not disappointed with the end result. A deliciously flavoursome dish which is also just SO quick and easy to make. I added one leek and 3 cloves of garlic, and sautéed these with the mushrooms. I always find that field mushrooms take quite a bit longer to cook than the smaller varieties of mushrooms, so I did sauté them for longer than the specified 6 minutes. This stage completed, I followed the recipe exactly, except for adding more like 4 ounces of feta. A recipe which I highly recommend! Thank you, KelBel, for another fabulous recipe which I know I’ll be making again.

    What a wonderful recipe! So easy to make and tastes great. Already a favorite. I made it twice, once with farfalle and once with fusilli. We would almost eat our fingers with the meal as they say in Turkey
