Easy Oven Baked Beans and Pork Chops

This is a really tasty easy pork chop dish! Purchase the thicker size pork chops for this dish, you may use the thinner chops but they tend to fall apart when baked as they bake too fast, if desired you can top with shredded cheddar cheese the last 15 minutes of baking, also chopped fresh garlic may be added also to the bean mixture — this may also be cooked in a crockpot, just brown the chops firstly in a skillet.

    Set oven to 350 degrees.

    Brown the chops in a frypan on both sides with salt, pepper and garlic powder (if using); set aside.

    Grease an Dutch oven or a oven-proof casserole dish (large enough to hold the ingredients).

    In a bowl mix together the pork and beans, chopped onion, chopped green pepper, BBQ sauce, ketchup, brown sugar and cayenne pepper (if using).

    Layer HALF of the bean mixture on the bottom of Dutch oven.
  6. 6
    Lay the pork chops on top of the bean mixture.
  7. 7
    Top with remaining bean mixture.

    Bake covered or uncovered for about 1 hour and 15 minutes, or until the chops are tender (if you prefer a thicker sauce then bake covered for half the time then finish baking uncovered).

    DELICIOUS.

    This recipe was a hit with DH. The flavor of the beans was delicious.(I added 3 cloves of garlic of course.) I prepared the bean mixture early in the day so the flavors could mingle. I also added a little honey as another reviewer did. I used four thick cut bone in chops, baked for 1 hour. Wish I could've baked longer for added tenderness as directed, but it was late in the evening & we were hungry. Will definetely be making again, even if I just make my beans this way from now on. Thanks for a great recipe, Kitten.

    I made this leaving out the green pepper (just my taste) and the cheese (accidentally) and it was tasty let me tell ya! I used the really thin cut pork chops and didn't have any problems with them falling apart. My cook time was approximately 40 minutes. They may have been done sooner but thats when I took them out. I will definitely be making this again. Thanks for a good recipe!

    Excellent recipe!! DH loved it! I used 2 large cans of Bush baked beans that I drained. I added garlic and serranos for our tastes. I also added a little spicy brown mustard, since that's how I make my baked beans. I baked as recommended and 10 minutes before it was ready, I topped it all off with french fried onions (another baked bean secret of mine)!! Thanks for the simple, delicious recipe that I can make on busy weeknights!!
