Aquavit's Quick Pickled Cucumbers

According to Marcus Samuelsson, this is the most popular Swedish condiment, after Lingonberry preserves, of course. They are an accompaniment to Swedish meatballs, other dishes, even served with hot dogs by street vendors. Cooking time is marinating time.
SERVES 4 -6 , 1 1/2 cups
Ingredients
- 1 English cucumber
- 1 tablespoon kosher salt
- 1 1/2 cups water
- 1/2 cup white wine vinegar
- 1 cup sugar
- 1 bay leaf, preferably fresh
- 2 allspice berries
Directions

Slice the cucumbers as thin as possible, using a mandoline if you have one.2
If you only have regular cucumbers, slice them in half lengthwise and scoop out the seeds before slicing.3
Put the slices in a colander and toss them with the salt.4
Let the cucumber sit while you prepare the marinade (or for up to about 30 minutes.5
Combine water, vinegar, sugar, bay leaf and allspice in a medium saucepan and bring to a boil.6
Remove from heat and let cool.7
Rinse the salt off the cucumber slices and squeeze out as much moisture as possible, using paper towels to blot them dry.8
Put the cucumbers in a medium bowl and add the marinade (the cucumber should be completely covered).9
Cover the bowl and refrigerate 3 to 6 hours before serving.

liked the crispness, but it was just too sweet. We did however manage to eat it all so I rated it no stars as we did like components of it and I also used plain vinegar which may have made quite a difference in taste. I will try a smaller version sometime later on. Thanks though for sharing and will try more of your recipes.

I cannot wait for the cucumbers in our garden to start growing b/c this recipe is awesome!!! I used store bought cucumbers of course this time, and loved the ease of the recipe. We will be having this a lot this summer. Zaar World Tour 3

These were great. Every X-mas my Norweigan great-grandmother served bread and butter pickles in a crystal dish. These are the same idea, but a tad more sophisticated in look and flavor. You could easily use 2 cucumbers (or mroe) to the amount of marinade. Yum...they will now be a staple on my holiday table. Great-Grandma would be impressed! Thanks!
