Zucchini Relish

I found this recipe in the local Newspaper when I lived in California. I entered it in the local fair...and won First Place!! We use this relish as you would a pickle relish...in fact we prefer it over pickle relish!

6 Pint Jars (change servings and units)

Ingredients

Directions

  1. 1
    Place all veggies in large bowl. Sorinkle with 1/4 cup salt. Let stand overnight. Prepare jars.
  2. 2
    Pour off water. Place mixture in large kettle.
  3. 3
    Add the rest of the ingredients and simmer on stove for 30 minutes. Put in jars, either process in water bath or turn filled jars upside down on a towel until they seal.

    My mother-in-law has been making basicly this same recipe for years and she passed it on to me. Everyone in my surrounding family loves this. I love it on crackers and cheese, besides on hamburgers and it tuna. Its a great recipe

    I made this last summer and forgot to rate it. This relish is terrific and gets better with age. It made wonderful Christmas gifts and my son in law has asked that I make it again this summer. There are lots of zucchini relish recipies out there, but this one was such a hit, I don't want to mess with success so I'm making it again. Yummo
