Sweet and Spicy Shrimp Kabobs

Chipotles give a zippy flavor Honey giving it a sweetness making it a perfect finger licking food for entertaining. Tweeked from Weber. Serve as an appetizer or over rice for a main meal. I served this with Lime Cayenne mayonnaise Lime Cayenne Mayonnaise. It went great with it!

SERVES 6 -8 (change servings and units)

    In a large bowl, combine the honey, chile pepper, garlic and salt. Add the shrimp and toss to coat. Cover and marinate at room temperature for 20 minutes or in the refrigerator for 1 hour. Remove from the marinade and discard any remaining marinade.

    Thread the shrimp through the tail and head (2 or 3 per skewer) onto small metal skewers or soaked wooden skewers. Strong rosemary stems are good to use as skewers.

    Grill over Direct High heat for 2 to 4 minutes, turning once halfway through grilling time. Arrange skewers on a serving dish and sprinkle with the cilantro.

I had only cooked shrimp in the freezer and REALLY wanted to try this recipe, so I marinated the cooked shrimp in the sauce for a few hours. Then I removed the shrimp, heated the sauce (to a boil) in a big frying pan. I then lowered the heat, added the shrimp just to take the chill off being careful not to overheat them. OH MY!! Wonderful! We found the shrimp is great as a hot dish or at room temp. I am already planning to make this as an appy for our next party. Thanks so much for this very tasty, easy dish.

    Another hit, Rita! We made these skewers for our BBQ last night and thought they were delicious! We loved the heat from the chipotles in adobo. I used a very generous 1 Tb. I didn't realize that I, too, accidentally mixed the cilantro in with the marinade until I just saw Beverly292's review, but I think it only enhanced the dish. I marinated the shrimp in the refrigerator for well over an hour, just because I had my hands full with the party. We skewered the shrimp with bell pepper, tomatoes, and red onions. Everyone thought they were great. I will definitely make this recipe again! Thanks!

    We have made these shrimp countless times now. Most often we make it when we're having company over that we want to impress without doing any work. No need to change the recipe...it turns out perfect every time. If there are leftovers we grind them up in the processor and mix them into cream cheese with a little extra crushed red pepper and garlic powder. So good with crackers.

    Unbelievable!! These shrimp are the bomb!! DD and I ate, and ate! So,so good! I made the marinade, tasted and thought instantly, 5 STARS!! DD and I added a bit more Chipotle, and a bit of the adobo sauce after tasting it, just because she and I love it Hot! Then I squeezed in a little lime juice, just for a little Zip. Rita, this recipe is to die for!! Thank you, thank you for sharing it! Made with massive amounts of pleasure for Zaar World Tour!!
