Gingerbread Waffles

We like to make these waffles on Christmas morning, but they are good anytime.

SERVES 2 -4 (change servings and units)

Ingredients

Directions

    Combine first 6 ingredients.
  2. 2
    Sift into bowl and set aside.
  3. 3
    Beat eggs and sugar until thick and foamy.
  4. 4
    Stir in buttermilk and molasses.
  5. 5
    Add to dry ingredients and stir until moistened.
  6. 6
    Stir in margarine.
  7. 7
    Pour 1 and 1/4 cups batter onto preheated, greased waffle iron.

    Cook until done.

    Seve with sliced bananas and whipped cream.

These were really great. I thought they had the perfect amount of sweetness (they were a little too sweet with maple syrup, but I'll just use apple sauce next time as a topping). Happily, I got four waffles out of this. Thanks for sharing!

    What a delicious treat for a cold winter morning! The only sub I made was the old trick of combining milk and lemon juice for the buttermilk. I did add 1/4 t nutmeg and a sprinkle of cloves too. These are just absolutely wonderful. I had mine with applesauce and my hubby had syrup on his. I will definitely make these again!

    I made this recipe for a Holiday Breakfast for the office. It was a major hit! I even was able to make the batter the night before, so I was ready to go the next morning.

    what wonderful waffles! we all love gingerbread and this tasted just the same. we put the bananas and whipped cream on it, then decided we needed a little maple syrup, too. we enjoyed them on a relaxing morning before christmas.
