Addictive Mexican Stew

My mother gave me this recipe. She found it while clipping coupons. It is from S&W. This is the best stew I have ever eaten and my family requests me to make it quite frequently. It has become a "comfort food" for us. Perfect to make if you have leftovers after baking a large turkey or chicken. Can be made vegetarian or vegan if desired.

SERVES 5 (change servings and units)

Ingredients

Directions

    Cook onion and garlic in oil in large saucepan until tender.
  2. 2
    Add cooked chicken, taco seasoning, tomatoes, beans, corn and chilies.
  3. 3
    Blend broth and cornstarch; add to saucepan.
  4. 4
    Bring to a boil; reduce heat and simmer 15 minutes; stirring occasionally.

    Serve with cornbread for a hearty meal.

Wonderful recipe! I made a few changes to it. I tripled the recipe to feed my large family. I didn't have olive oil, so I used red palm oil (I would have anyway. I like the flavor!) I used El Pato jalapeno tomato sauce for some of the diced tomatoes (my family doesn't like tomato chunks very much). It made for a happy crew! Thanks!

    Easy Easy Easy and Fast to make. And healthy too. My husband who took this in his lunch swears that it tastes good cold too. If you buy the onions pre-chopped and the chicken is already cooked, there is less than five minutes prep time. It smells SO good while it is cooking. I like the fact that you can buy the ingredients in bulk and make it at any time. This will become our "comfort food" too.

    Wow what a fast and yummy meal!!!!! I used shredded already cooked chicken from Schwan's. I'll stock up on frozen onions, and it will even be faster!! I am going to fix this when we have after school activities that take us away from our evening routine. Fast and healthy.....
