Do Ahead Broccoli Casserole

Excellent do ahead dish. put it all together, refrigerate and pop in the oven 50 min before dinner. Very attractive dish. To cut back on the amount of liquid that may end up with your finished dish remove seeds from the tomatoes and instead of slicing them and cut them in quaters

SERVES 6 -8 (change servings and units)

    Preheat oven to 325F degrees, butter 8" square oven proof dish.
  2. 2
    Arrange broccoli in the dish.
  3. 3
    Top with the sliced tomatoes or deseeded tomato quarters
  4. 4
    Sprinkle with the basil.
  5. 5
    In a bowl combine the sour cream, mayo and parmesan (reserve a little parmesan to sprinkle over top).

    Spread this mixture over top the tomatoes.
  7. 7
    Sprinkle with remaining parmesan.
  8. 8
    Bake uncovered 40-50 minutes.
  9. 9
    It should be bubbly and light brown.
  10. 10
    Serve.

Surprisingly good!! I only say that because I didn't think I would like the tomatoes; but I did!! I used 8 small Roma tomatoes (thats what I had on hand), and sliced them in quarters (wedges). I did sub lite mayo and low fat sour cream for the full fat versions. This dish was delicious, and I didn't find an excess of liquid in the bottom. Maybe the Roma tomatoes made the difference? Thanks.

    I found that the final dish was yummy, but very watery. Although I enjoyed the broccoli/tomato combo, and the flavor of the tomatoes in particular, others tasting the dish didn't like them, and I feel they contributed the bulk of the excess liquid. Therefore, next time I will try this without tomatoes.

    Excellent do ahead dish. I thought the broccoli may be a bit mushy after an hour in the oven but it comes out crisp and good. Loved it. Thanks again Bergy.

    This is a winner. Didn't have broccoli soo used califlower. Added fresh garlic, butter and feta onto the tomatoes. Added a bit of mustard to mayo/s. cream mixture Spread on top. Wonderful!
