Lobster Stuffed Mushrooms

Great appetizer, quite easy to fix.

Ingredients

  • 1/2 lb cooked lobster, cut up
  • 1/2 cup breadcrumbs
  • tablespoons finely chopped celery
  • tablespoons mayonnaise
  • 1/2 teaspoon salt
  • teaspoon pepper
  • 1/3 cup parmesan cheese
  • ounces fresh whole mushroom
  • tablespoons finely chopped onion
  • sharp cheddar cheese
  • Directions

    1. 1
      Clean and dry mushrooms, remove stems.
    2. 2
      Mix all ingredients together and stuff mushrooms.
    3. 3
      Place small pieces of sharp cheddar cheese on top of each mushroom.
    4. 4
      Bake at 350 degrees for 20 minutes, uncovered.

    WOW! DH and I had these for our Valentine's dinner and they were better than Red Lobster's! There was quite a bit of stuffing leftover, so we put it into soufle cups, topped it with cheese and baked it along with the mushrooms. It made a great side dish

    this was magical! so easy and delicious. I also used portabello mushrooms! just stack stuffing on top! I also topped with lobster claw on each for presentation! I think this would work just as well with crab which I will try next time...and there will be many more times!! A definite keeper!

    I apologize - I forgot to rate this! And I'm back making it again less than 2 weeks later, if that is any indication on how good it is. I use portabellas!
