Peanut Butter Cup Cookies (Tarts)

I first saw these at a bake sale and was so impressed. You bake a ball of dough in a mini-muffin tin, bake, and press a Reese's peanut butter cup into it after you take it out of oven. You are left with a picture-perfect tart, receiving "oohs and aahs" and "how did you do it?" You could even use the refrigerated sugar/peanut butter cookie dough too.

SERVES 36 , 3 dozen (change servings and units)

    Cream peanut butter, butter, sugar and brown sugar until fluffy.
  2. 2
    Add egg, vanilla, flour, baking soda and salt' mix well.
  3. 3
    Roll into 1-inch balls (I use small cookie scoop) and place in miniature muffin tins with or without papers.

    Bake 8-10 minutes at 375°F.

    When tins are removed from oven, immediately press 1 peanut butter cup into the center of the cookie.

    Allow to cool completely before removing cookies from the tin.

What a fun recipe! I made it as posted except for I did not add the salt because I did not have unsalted butter. They came out perfectly...they looked wonderful and got rave reviews! They look like they take a lot of work but the hardest part really is unwrapping all the candies and not eating some as you do it! The cookie dough alone is really good too. I had some dough left over on my second batch when I ran out of candies and I just made regular peanut butter cookies with it and they tasted good too! I got 36 out of each batch. Great recipe!     These were so easy to make and delicious! I had problems getting them out of the pan though. I tried Pam-ing them and everything but they were still sticking. That won't keep me from making them again and again though! Thanks for a great recipe!

    i don't know what else i could say about these wonderful little bites of heaven, but here i go. first of all, the dough was very easy to make,but as some of the other posters stated the dough was a little moist so i chilled it for about half an hour,and it worked just fine.i think i might have made the cookie dough balls just a little smaller than i was supposed to, because i ended up with half a dozen more tarts that what the recipe stated. the baking time was right on the money.if any one is interested a 9.2 ounce bag contains 34 mini reese's cups.this will be on my cookie trays for christmas.thank you for posting.

    OMG, Girl, these things have got to be the most addictive cookies known to man! I can't believe how easy they are ... I followed your directions and got the prettiest little doodads you ever saw!
