Quinoa Casserole

I've been trying to find different ways to use quinoa, since it is so good for you. This recipe is from Eden Organic Foods.

SERVES 5 (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 350°F Roast rinsed quinoa in a skillet until it pops.
  2. 2
    Place in casserole dish and add water.
  3. 3
    Heat oil and saute onions, garlic, and curry in skillet until onions are translucent.
  4. 4
    Add celery, broccoli, and tomato; saute briefly and add to quinoa.
  5. 5
    Add soy sauce and vinegar.
  6. 6
    Cover casserole dish and bake for 45 minutes.

This is my first successful attempt at quinoa! Before I would always forget to wash or forget to toast. It came out perfect in this recipe! Like the others, I couldn't find hot pepper sesame oil, so I just used red pepper and sesame oil. It is definitely a recipe I will be making again. Thanks for a great way to cook this awesome grain!

    This recipe was wonderful. Being new to quinoa, I am now a huge fan because of the simplicity of this quinoa casserole recipe. Thank you! Veganhood may not be that far away for me after all.

    I really liked this. I could not find the hot sesame so just added some hot sauce as another reviewer suggested. Thanks for such a healthy recipe.
