Chicken Piccata

Lightly breaded and pan-fried with lemon juice and capers, this dish has a lot of zest!

SERVES 4 (change servings and units)

Ingredients

Directions

    Chop the onion and set aside.
  2. 2
    Crush the garlic and add to the onions.
  3. 3
    Combine chicken broth, lemon juice, parsley, capers and black pepper.
  4. 4
    Cut each chicken breast in half to make 4 thin filets.
  5. 5
    Salt and pepper the chicken.
  6. 6
    Pat the chicken in bread crumbs to coat.
  7. 7
    Heat the olive oil in a skillet- there should be enough to coat the bottom (note: try not to use a non-stick skillet).

    Cook chicken on medium high heat for 2-3 minutes per side, or until browned.

    Remove chicken from skillet and throw in the onions and garlic.
  10. 10
    Sautee for about 5 minutes or until onions are softened.

    Add the chicken broth mixture and bring to a simmer.
  12. 12
    Add the chicken and let simmer for a few minutes to heat.

    Garnish with lemon slices or parsley.

This was really good despite my massive screw up. I lost the recipe just in time to cook so I forgot to bread the chicken before the saute. The kids still gobbled it up, and my husband and I loved the combination of the capers and lemon juice. I will try it again (correctly) next time and I'm sure it will be a five star!

    Loved it! It had such a nice flavor from the lemon and capers. We ate it for leftovers the next night.

    I loved, loved, loved this chicken. I am a real fan of capers and think they give just a wonderful accent flavor to the otherwise bland chicken. I can't say enough about this chicken, except "Cluck Cluck"!

    what a tasty and pretty dish! I served mine with some noodles. The fam. loved it however my bf wasnt crazy about all the capers.
