Hellmann's Parmesan Crusted Chicken (Low-fat Version)

This is an unbelievably simple recipe that tastes wonderful. The way I make this low-fat is by using Hellmann's "Just2Good" mayo instead of the regular.. unlike fat-free, I think it tastes JUST like light mayo and pretty close to the real thing. I also substitute low-fat Parmesan cheese, if possible. Enjoy!

    Combine mayonnaise and cheese.

    Spread on chicken, then sprinkle with bread crumbs.

Awesome! I used Fat-Free mayo, and did add a bit of basil, salt and onion powder after reading that someone thought it was bland. It would have been fine without it, but we liked it a lot with the additions. Also about 75% of the way through cooking I poured a small amount of melted margarine on the breasts, and added a smidge more bread crumbs. It gave the chicken a really nice light crispness on top of the creamy coating. My husband really enjoyed this dish, so we are definitely making it again!

    I have made this a couple of times now, the first time i followed the recipe exactly and althouth the chicken stayed wonderfully moist and tender the topping was a little bland. on the second occasion i added a little fresh garlic and sweet chilli dipping sauce to the mayonnaise topping and the depth of flavour it created was amazing, i also used low fat mayo which i felt did not compromise the flavour of the dish at all. Great basic recipe, I will definately be using this one regularly.

    DeeeeeLICIOUS! This was very simple, yet so flavorful. Just slap those little chickies with the mixture, bake and scarf down! Served with Yukon Gold Mashed Potatoes with Garlic (#74230) and KittenCal's Creamy Parmesan Broccoli (#80120). Thank you!

    This is soooo easy to make and tastes soooo good! Very moist and flavorful...I didn't use lowfat mayo though, just the original Hellman's. My kids really liked this one too! Thank you so much for posting this, Martha Claire!
