I was going through my files on cucumber sandwiches this morning and realized I had not gotten around to posting a review on this delightful concoction. I particularly like it on lightly toasted roundels of fresh baguette. I run a hand full of dry roasted peanuts through my Champion juicer, like most foods, peanut butter is better fresh and since the Champion is so easy to clean, why not grind it fresh as I need it. I also like PB and banana sandwiches on whole wheat. I've tried most of my favorite PB sandwiches substituting other nut butters, almond, cashew, macadamian, Brazil, filbert and whatever else comes to mind. You can't hardly go wrong. Your crazy, peanut butter and cucumbers do not go together AT ALL! Which is why I can't understand why this is so yummy
. A nice alternative to PB&J. I like the added crunch of the cucumbers, it isn't too much but just enough to be satisfying. Addition: I am upping my origional star count because I am addicted to these sandwiches. I lived on these for lunch this summer. They are so good and so satisfying. Its also great on a rice cake and any type of bread will do as will toast (which adds its own wonderful quality to this sandwich). There is something just so satisfying about this sandwich. I know, its silly to get so worked up over a simple sandwich like this one but I love it!

Havn't tried this recipe...but my son makes peanut butter, cheese and dill pickle sandwiches....different strokes for different folks

I LOVE these sandwiches but I use crunchy peanut butter and add hot red pepper flakes!
