Spinach Saute With Brown Butter & Garlic

This quick-cooking vegetable accompaniment is best with tender, young spinach. Recipe from Fine Cooking

    In a large saute pan over medium heat, melt the butter with the garlic until the butter is golden brown and smells nutty; make sure the garlic doesn’t burn.
  2. 2
    Raise the heat to high and add the spinach, in batches if need be, flipping and stirring, until just barely wilted, about 1 minute Take the pan off the heat; remove the garlic.
  3. 3
    Season the spinach with salt, pepper, and a squeeze of lemon.
  4. 4
    Toss and serve immediately.

This spinach even had a spinach hater saying yum. I used minced garlic as I was out of whole cloves so I left it in and it still tasted good. Next time I'd like to substitute red wine vinegar for the lemon juice. Served with Sticken Chicken and Rice Cooker Fried Rice

    I love this! It's delicious, quick and simple. I made it as a side dish for pan cooked salmon, what a great combo - I'll definitely be making this again. Thanks for posting.

    I used "I Can't Believe it's not Butter" instead of butter because of the saturated fat level, and used lemon pepper instead of 'salt & freshly ground black pepper. It turned out wonderful! Really loved it as did my company.
