Broccoli With Red Pepper Flakes and Garlic Chips

Broccoli is loaded with lots of vitamins A and C and several minerals, it is one of the most healthful veggies. This is a spiced up version that is low in fat and not low on flavor. The recipe comes from Williams Sonoma Essentials of Healthful Cooking.

SERVES 4 (change servings and units)

Ingredients

Directions

    In a small skillet over medium-low heat combine the olive oil, garlic and red pepper flakes.
  2. 2
    Heat, stirring frequently, just until the garlic begins to turn golden on the edges, approximately 1-2 minutes.
  3. 3
    Remove from heat, strain through a fine-mesh sieve, reserving the oil and garlic in separate containers.
  4. 4
    Cut the broccoli into florets, trimming the stalks until they are about 1-2 inches long.
  5. 5
    Place the cut broccoli in steamer basket over boiling water, cover tightly and stem until crisp tender, 4-6 minutes.
  6. 6
    Place broccoli immediately into a serving dish, sprinkle with garlic flakes and 1 tablespoon of the oil.

    Serve.

    The remaining oil can be saved and used in other dishes later.

Terrific recipe and fabulous taste. Used elephant garlic and organic broccoli, but did go a bit over on the pepper flakes as I love them. Super meal that went with some good organic whole wheat dinner rolls, and fettuchini with olive oil and shaved parm cheese. Thanks for sharing.

    I ran out of time during the tour...so I'm so glad we came back, I was able to try this recipe! I knew we'd love it...it's simple but has the flavors we love!! Thank you Paula!

    Very good, another great way to enjoy broccoli. Love the flavor of the garlic & olive oil with the touch of hot, spicey flavor. I made it just like the recipe said, but cut the recipe down for two. Thank you, Paula for anther yummy recipe.

    Call me a garlic fiend - made just two portions and used 2 cloves. Really enjoyed the spiciness from the pepper and garlic.
