Low Carb Salmon Patties

I have made salmon patties for over 25 years and finally discovered the "secret ingredient" - lemon pepper. The aroma and flavor can't be beat.

SERVES 4 (change servings and units)

Ingredients

    Pick through salmon taking out bones and skin; break up chunks with fork.
  2. 2
    Beat eggs with fork; add to salmon.
  3. 3
    Put half slice of low carb bread in food processor and pulse until crumbly.
  4. 4
    Add bread and onion to salmon-egg mixture.
  5. 5
    Mix lightly.
  6. 6
    Spray frypan with vegetable spray (Pam).
  7. 7
    Make 4 patties and place in frypan.
  8. 8
    Sprinkle liberally with lemon pepper seasoning (very important ingredient for flavor).

    Fry patties lightly, flip and fry other side, approximately 10-15 minutes total.

It is the perfect flavor match; lemon pepper and salmon. I added the full 2 tsp of lemon pepper to the salmon mixture before cooking rather than sprinkling it on later.The patties held together nicely and tasted great alone and with cheddar cheese on buns as a sandwich.

    You're right--the addition of lemon pepper made a big difference in flavor. I found the mixture to be a little loose, so I added the other half of the bread (and to stretch the number from 4-6!). Thanks!

    Salmon bones are very soft and loaded with minerals such as calcium and magnesium. Eating them is great for bone density. It is very effective for young children when their long bones are growing.
