Lazy Day Brunch Casserole (Crustless Quiche)

This is a very simple, but delicious brunch casserole - almost like a crustless quiche. We had this for our Lazy Day New Years brunch (our guests come in pajamas and stay that way all day - hence the name). It's very colourful and quick to throw together, especially if the cheese is grated and broccoli is chopped the day before. Don't chop the tomatoes ahead of time though as they tend to get soggy and lose flavour if refrigerated.

SERVES 6 (change servings and units)

    Preheat oven to 350°F.

    Mix milk, flour and eggs well.
  3. 3
    Add the remaining ingredients and pour into 8 X 8 greased baking dish.

    Bake for 40-45 minutes.

    Let sit 10 minutes before serving.

Excellent quiche! I made it first the way it was posted and it was GREAT! I then did some experimenting like Sussan did above and took out the mushrooms and bacon and added broccoli and Smoked gouda cheese with the monterey jack, yummy is all i can say! you can definately play with cheeses and veggies. (just keep the amounts the same) thanks so much for a wonderful recipe! it's so worth the 5 stars! and easy!

    Delicious! This recipe is easy, tasty, and low in the carbs that DH is trying to avoid. I will make this again as is but also experiment with whatever odds and ends of cheese, veggies or even meats that I find in my fridge. Thanks!

    We found this to be absolutely brilliant, with the individual flavour of each of the ingredients complemented by the savoury combination of cheeses that melted through. I subbed thinly sliced mushrooms for one cup of broccoli and gouda cheese for the monterey jack. Thanks for posting, Martha!
