Potato Latkes

These are delicious served plain with a bit of salt sprinkled on them or traditionally with apple sauce or sour cream. Serving size is approximate. You may grate potatoes if you like, but we prefer them chopped.

SERVES 6 , 1 batch (change servings and units)

    Cut peeled potatoes into chunks and chop in food processor.

    Cut onions into chunks and chop in food processor.
  3. 3
    Mix potatoes and onions together in a colander over a large bowl.
  4. 4
    Allow to drain.

    Pour mixture into a large bowl and add beaten eggs, salt, pepper, baking powder, sugar, and a tablespoon of flour at-a-time until mixture holds together.

    Mix well.

    In a fry pan, melt shortening.

    You'll need about 1/8".

    Spoon heaping tablespoons of the mixture into the oil.

    Flatten each spoonful with the back of the spoon to make thin latkes.

    Fry until the edges turn a dark brown.

    Flip over to fry the other side.

    Drain on a paper towel.

    Serve with apple sauce and/or sour cream.

Husband was the chef on this one and they turned out perfect. Great taste, crunchy and had plenty of leftovers. Yummm-o.

    Wonderful! They came out perfect. Have tried several recipe's and none came out perfect, even the first one! Thanks so much. I went thru your recipe's and made a meal from several of them! Thanks so much for a "perfect" Latke recipe! Served with Sour cream and Applesauce. Yum

    This is such a great recipe! My grandma makes these for me with left over mashed potatoes so that takes care of the shortening and baking powder part, but we never had onions in it before. It was such a simple addition, but such a delicious one adding a funner texture to it.

    It was a lot easier, when I followed your directions . I made the first few too big — used a mixing spoon and not a tablespoon — and they were hard to turn without splattering the oil. I liked using the food processor, rather than the grater, it’s a nicer consistency. It reminded me of McDonald’s hash browns, and I mean that in the very best way... The only change I made was to cut the onion in half, to suit my family's tastes. If it was just for me I'd use your proportions. I'll make these again; it’s a good recipe.
