Chicken Thighs With Sweet Onion Balsamic Relish

Based on a Cooking Light recipe, this has been modified to suit my own tastes. The sweet onions and balsamic vinegar create a lovely contrast in flavors that pair together so well. I usually serve this with couscous or brown rice with a green vegetable such as zucchini or spinach. Reheats well for lunch the next day.

SERVES 4 (change servings and units)

    Heat the oil in a large nonstick skillet over medium heat.
  2. 2
    Saute onions with 1/4 teaspoon of pepper for about 5 minutes, the onions should be soft and golden.
  3. 3
    Add 1/4 teaspoon pepper, chicken, oregano, and thyme to pan, and sprinkle with 4 teaspoons balsamic vinegar.

    Cover, reduce heat, and simmer 25 minutes or until chicken is done.
  5. 5
    Uncover, increase heat, and cook 2 minutes or until liquid almost evaporates.
  6. 6
    Stir in 1 teaspoon vinegar, and sprinkle with parsley.

The simple and few ingredients in this recipe combine to make a powerfully flavoured dish that is quick and easy to throw together. Both the chicken and the onions are moist and tender. It's perfect after a long day, as the dish pretty much takes care of itself. Yum! Thanks Toni!

    Very easy to make & excellent! The onions were beautifully carmelized & the chicken was moist & delicious. I thought the Balsamic (sauce) may be too sweet - but was pleasantly surprised - definately recommend!

    What an easy way to fix chicken thighs! The balsamic vinegar didn't overpower the rest of the ingredients. I did add salt to the seasoning mix and it was an improvement IMHO. The cook time was accurate and we really enjoyed this chicken dish. Thanks, Carole in Orlando

    Loved the flavors of the carmelized onions and balsamic vinegar! The last splash after cooking makes all the difference. Before cooking the chicken, I salted it, since I did not see where the salt was supposed to be used. Easy to do, and surely will make again.
