Rainbow Bean Soup Mix in a Quart Jar

This makes a great gift. I have made many welcome/gift basket for my neighbors. I add a can of crushed tomatoes and some soup crackers.

SERVES 12 (change servings and units)

    *Lookfor red lentils or yellow split peas for a real rainbow of colors in this mix, if you can't find use regular brown lentils or pick a colorful dried bean of your choice for this layer.

    **Mix and place in a thin zipper sandwich bag.

    Optional: Top jar with a 5 oz can of ham, if you do you will need to change the instructions to read"Add 8 cups water, ham and so on.

    Use a Quart Jar that has a wide mouth,but if you can't find one you can use a regular Quart jar.

    Place each type of bean in jar in order listed above.

    Top with seasonbag, gently flatten bag so it can be seen from all sides.

    Put lid on jar.

    Decorate jar.

    Attach recipe to jar.

    Put a expiration date on year from now.

    RAINBOW BEAN SOUP.

    Remove seasoning packet.

    Set aside.

    Rinse beans place beans in larg microsafe dish.

    Cover with water 1" to 2" over top of beans.

    Cover dish loosely with plastic wrap.

    Microwave on high for 15 minutes, rotating after 7 minutes.

    Drain and rinse beans very well.

    Place beans in very larg pan.

    Add 8 cups water and 1 can crushed tomatos and seasonings from packet.

    Cover, bring to boil.

    Lower heat, cover pan and simmer 1 1/2 hours or until beans are tender.

    STIR OCCASIONALLY.

I made 2 of these for Xmas gifts this year. So nice and colorful. Will take a pic when I get some Xmas fabric for the top. I will give the soup review when it is made. I hope my Mum makes it while I am visiting her this year. Pic to come

    We received this as a gift and I'm glad to see it here, because it's a delicious soup. Along with the beans and the soup mix we received a 14 oz can of tomatoes that we added undrained. I don't like canned hams or spam, so I added approx 1 c of some deli ham from our fridge. The beans took about 2 hours to become tender while cooking.

    I made two jars of this soup to give away as Christmas gifts this year. The finished product was so pretty, like something you would find at a craft market. My jars weren't quite big enough so I would recommend measuring the jar first so you won't realize at the last minute that all of the ingredients won't fit. Thanks for such a creative idea!

    I first got this for a gift and the next year I made it for others. It was so easy and tasted great. My husband likes it with meat in it (I usually use kielbasa) but it really doesn't need it!
