Pizza Style Meatloaf

I got this recipe out of HomeBasic book. It's a good carb recipe. Made it tonight for supper and hubby said to make it anytime. I used regular sauce as that's all I had on hand.

SERVES 8 (change servings and units)

Ingredients

Directions

    Preheat oven to 350°F.
  2. 2
    In a large bowl combine ground beef, 1 cup sauce, 1/2 cup green peppers, 1/2 cup oats, 1/2 cup cheese, eggs, salt and pepper.

    In a 13 x 9 baking pan, shape into loaf.
  4. 4
    Top with 1/2 cup sauce.
  5. 5
    Bake uncovered for 50 minutes.
  6. 6
    Top with 1/2 cup cheese and bake an additional 10 minutes.
  7. 7
    Let stand 10 minutes before serving.
  8. 8
    Remove meat loaf to serving platter and serve with sauce.

    377 calories per serving, 26.8 g fat, 7.2 g carbohydrates.

This is sooooo good!!!! I made it early in the day, thinking I would get a head start on dinner. Now, I'm worried that there won't be any left as I keep taking bites out of it. It is so juicy and I used Kezza's Chunky Pizza Sauce in place of the jarred sauce. The flavors of the green peppers, onions, basil, and oregano danced in my mouth! I made I half recipe (kicking myself for that) and I'm hoping I'll have some left to serve for dinner tonight! Thank you Nora!

    My DH who usually considers meatloaf a necessary evil, actually commented that "this is very good!" So...that is definitely worth five-stars IMHO! We all were commenting on how much we liked this. We didn't have mozzarella but some other cheese (the label was missing, so it was more of a mystery cheese). I'm sure that mozzarella cheese would only IMPROVE the flavor even more! I've never used oats in meatloaf before, and they really added nice body to the meat. I cooked it in a 9x9 pan, but it would make two nice loaves in loaf pans, too. Served it with Portuguese Potatoes (another awesome recipe) along with frozen (cooked) sweet peas--a tasty dinner in early January! Christmas 2007 Beverage Tag

    Thanks for a new tasty meatloaf recipe. I left out the peppers cause of family preference, but added everything else as specified. Very good. Will make this often.
