Creamy Dill Sauce (for Smoked or Poached Fish)

I really like this sauce served with all kinds of smoked fish (salmon and trout immediately come to mind) - it really complements the richness of the fish, without masking the wonderful smoky flavour.

Ingredients

  • cup sour cream
  • tablespoons fresh dill
  • tablespoons Dijon mustard
  • tablespoon fresh lemon juice
  • 1/2 teaspoon sugar (optional)
  • salt
  • fresh ground pepper
  • Directions

    1. 1
      Combine all the ingredients in a small bowl and stir to combine well; if using the sugar, stir a bit longer to ensure it dissolves.
    2. 2
      Put into a pretty crock, top with a dill sprig, and serve alongside your favourite smoked or cold, poached fish.

    A very tasty sauce for my poached salmon. It made the difference, and its so simple. I had all the ingredients so it took me 3 minutes to made!!! I didn't made any change but omitted the sugar. I had also plain boiled potatoes and I was great as well! Low cal also. I will make it again when I'm having salmon or boiled potatoes. Made the potatoes a very nice salad!!! Thanks so much Ev!

    This is perfect for cold poached bluefish (Cold Poached Bluefish With Dill Sauce). Bluefish, like salmon, poaches very nicely. Jim

    really easy, and very tasty! I used light creme fraiche rather than sour cream, and served it with Salmon
