Champagne Chicken

A very nice dish for special friends.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Flatten chicken and dust with the flour, salt and pepper.
  2. 2
    In a very large skillet Melt butter and olive oil together over medium heat.
  3. 3
    Add chicken and saute 5 minutes, turn and add the champagne, continue to cook for 12-15 minutes.

    Add the cream and rosemary and cook until thickened.
  5. 5
    Remove to a serving plate, pour sauce over chicken and garnish with parsley.
  6. 6
    Serve with rice.

We used the Quorn brand vegetarian (fake chicken!) cutlets, and this was still very good! I wish I could give 4 1/2 stars. We used Italian seasoning instead of parsley and rosemary. It was not hard to make and it was delicious! Thanks!

    Good dish! Had some champagne left over from new year's, so decided to make this. I halved the recipe for sauce, but used 2 chicken breasts. Used fat free half and half and it worked well. I also added onion and couple cloves of minced garlic. Served over basmati rice, this was a great, easy to make meal! Would definitely make again when we have leftover champagne!! Thanks for posting!

    While this is a rich dish, it is not very heavy. I think I'm in heaven. My husband, my 80 year old very picky neighbor, and I loved it. This has got to be the best chicken recipe I've ever cooked. I wish it wasn't so fattening, I would eat it every week.
