Clock Watchers Chicken Skillet

This is a quick and tasty one skillet meal. Just add a salad and garlic bread and dinner is ready in no time. Perfect for those busy nights when we had to run to hockey practice. Those were the days!!

SERVES 4 (change servings and units)

Ingredients

Directions

    In a large skillet, cook chicken and onion until onion is tender.
  2. 2
    Remove chicken from skillet and keep warm.
  3. 3
    Add tomatoes, broth, basil, garlic and pepper to skillet.
  4. 4
    Bring to a boil; stir in spaghetti.
  5. 5
    Reduce heat; cover and simmer for 15 to 20 minutes.
  6. 6
    Return chicken to pan; cook until juices run clear and spaghetti is tender.
  7. 7
    Sprinkle with Parmesan and serve.

Great! I went vegetarian omitting the chicken. I used jarred garlic & cooked my onion in olive oil since I did not have chicken. My toddlers gobbled it up! Tonight I am making it again, but this time adding some sliced squash in when I add the noodles. Yummy dish. Thanks for posting it.

    Both my husband and I are home with the flu, and we wanted something comforting and light at the same time. This was great! I diced the chicken left it in the skillet without it drying out. The only thing I might change is decreasing the amount of broth a little because it was kinda soupy. Besides that it was just what we were looking for!

    This dish is a total yummy one skillet meal. I used all ingredients listed in the recipe with the exception of I forgot the parmasan cheese but once I realized I had forgotten it everyone said they felt it was great without it. I also did not take the chicken out when I added the other ingredients I simply let everything simmer together and it was rated by all as a definate keeper and I have to make sure both my daughters get the recipe so they can make it too. Maybe I'll even get it at their house soon Thanks so much ugogirl for such a yummy dish.

    Oh, wow! This is amazing! I was a bit under the weather today and wanted something dead easy and contained everthing. This was just the ticket. I used lnguini and put in a can of drained green beans and a cup or so of mushrooms with the onions. Meat, noodles, lots of veggies. Everything! I didn't have any dried basil, so I used a spoonful of mixed Italian spice. Thank you, Girl, for keeping body and soul together!
