Melt in Your Mouth Blueberry Muffins

This recipe came to me by way of my sister Debbie. A great breakfast muffin that we enjoy with a cup of tea on a late Sunday morning or any time.

Ingredients

  • cup white sugar
  • 1/2 cup shortening
  • 2 egg yolk (beaten)
  • 1 1/2 cups flour
  • teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 egg white (beaten stiff)
  • teaspoon vanilla
  • 1 1/2 cups floured blueberry
  • sugar, for sprinkling on top
  • Directions

    1. 1
      Cream shortening, sugar and egg yolks.

      Sift flour, baking powder& salt together& add to creamed mixture alternately with milk.
    3. 3
      Fold in egg whites& vanilla.
    4. 4
      Add floured blueberries.
    5. 5
      Line muffin tins with muffin cups.
    6. 6
      Fill 2/3 full.
    7. 7
      Sprinkle with sugar.
    8. 8
      Bake 20- 25 minutes in 350 degree oven.

    I've made this recipe twice in the past couple of days and it's just fantastic. I usually don't find blueberry muffins that appetising - they tend to be a bit doughy and heavy - but these are beautifully fluffy. I think I might try these again but alternate the berries for the sake of variety - perhaps with raspberries and/or cranberries. Thanks so much - this recipe is one I'll be keeping in my collection for a long long time! :-D

    Used a little margarine because I was short on shortening. I also used mixed berries. These muffins are very good and easy.

    DELICIOUS! I had to cut the recipe in half as there are only two of us and I have done lots of baking recently; I made 6 DEEP muffins and they were so LIGHT and fluffy! I only had half a cup of semi dried blueberries, but the flavour was still amazing. It was the light and fluffy texture that both of us loved. Made for Redsie's Month of Muffins - Feel the Love tag game 2008!! GREAT muffins, THANKS for the recipe. FT
