Allegheny Applesauce Bread

Scrumptiously moist and delicious, sweet and spicy, simple and wholesome: contains no refined grains or sugars, just lots of good stuff like raisins, honey, and wheat germ. You've got to try this bread!

SERVES 12 (change servings and units)

Ingredients

Directions

    Beat butter and honey together in mixing bowl.
  2. 2
    Add eggs, applesauce, and maple extract (if using) and beat well.
  3. 3
    Combine next six ingredients (flour through nutmeg) in separate bowl; stir in raisins.
  4. 4
    Add dry ingredients to butter mixture, stirring until combined.
  5. 5
    Bake in greased 5x9 loaf pan at 350 degrees for 55-60 minutes, or until tests done.

    Cool in pan for 30 minutes, then remove from pan and cool completely on wire rack; wrap in plastic wrap and chill overnight before serving.

    This bread freezes well, so double the recipe and save one for later!

    Sorry, this didn't work for me, either. I didn't really taste the applesauce, used 1/2 cup honey & even upped the cinnamon but it really didn't get the good, wholesome taste I was hoping for. Thanks anyway!

    Very moist and nice. I followed Ladypit's lead and used part maple syrup in lieu of the honey. I probably used about half honey and half maple syryup, because I was short on both- I went with the 1/3 cup measure, but I felt that I would have liked it to be a little sweeter. So next time, I would use the larger quanity. I was surprised that this did not seem to have nearly any apple-y flavor. The predominant flavor was wheat germ, which was still pretty good. I think that the spices could have been knocked up a little, because I really couldn't taste much over the wheat germ. Not sure why that was so strong. I made it in a loaf pan and it was terrific and moist. Anyway, I think this a great little whole foods recipe- a good one to know that you are serving a nutritious breakfast to your family. Thanks!

    Yumm! I love whole foods type recipes that taste so good! I used mostly butter plus a little canola (so I didn't have to open another stick), whole wheat pastry flour, and maple syrup instead of honey and used sweetened dried cranberries. I baked it in a cake pan (my loaf pans were busy) and it was extrememly tasty and moist. A good snack bread!
