Simple Fried Egg Sandwich

My daughter really likes this sandwich. She usually has 2 at a time. The mustard used in this recipe can only be found in Ontario, Canada as far as I know. So some Canadians will know it. You can substitute though. Just don't use the regular kind unless you want to of course.

SERVES 1 (change servings and units)

    Crack the egg in a lightly buttered frying pan on medium heat.
  2. 2
    Break the yolk and cook on one side then flip and fry on the other side.
  3. 3
    Salt and pepper to taste.
  4. 4
    Turn off heat.
  5. 5
    Place the slice of cheese on top and melt slightly.
  6. 6
    Meanwhile toast the bun as you like.
  7. 7
    Spread the mustard on one or both sides of the bun and place the egg between them.
  8. 8
    Makes a nice snack or light lunch with some raw veggies or salad on the side.

What a nice twist to a classic egg sandwich! I have always used mayo, and I was pleasantly surprised at how much the honey mustard made such a tasty difference. Thanks for the recipe!

    I made these for a quick and early breakfast and it was really good. I used two slices of chedder cheese, and used regular prepared mustard. I enjoyed the whole thing very much.

    I made 8 of these, wrapped in wax paper and placed them in gallon freezer bags for a quick breakfast. I did ommit the salt since I read somewhere that it can make the eggs rubbery when frozen. Like others never thought to add honey mustard, what a delicious difference!

    i make this all the time with the Kraft processed cheese slices...love it. I find i don't need additional salt, as thise little slices already pack enough.
