Taco Bell Enchiritos

This is a copy cat recipe I got from Top Secret Recipes. These are fabulous and easy! I usually have all these ingredients on hand. DH loves when I make these!

SERVES 12 (change servings and units)

    In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder.Use your hands to thoroughly mix the ingredients into the ground beef.

    Add the seasoned beef mixture to the water in a skillet over medium heat.Mix well with a wooden spoon or spatula, and break up the meat thouroughly as it cooks.Heat for 8 to 10 minutes, or until browned.The finished product should be very smooth with no large chunks of beef remaining.

    Microwave the beans for a couple of minutes on high.

    Warm the tortillas by wrapping them in a moist towel and microwave for 1 minute on high.

    Spoon about 3 tablespoons of refried beans down the center of each tortilla.

    Spoon 3 tablespoons of beef on top of the beans followed by a couple teaspoons of minced onion.

    Fold the two sides of the tortilla over the beans and meat and carefully place in a microwave safe casserole.

    Spoon a couple tablespoons of red sauce over the top of the tortilla, then sprinkle on a couple tablespoons of the shredded cheddar cheese.

    Repeat until casserole is full.

    Heat up the dish for 2 minute's in the microwave, until hot& the cheese on top begins to melt.

    Garnish with Sour cream and green onions if desired.

Wow, thank you! This is obviously a hit with the husbands! Enchiritos are mine's favorite, and last night he was so pleased. I put the left overs in his lunch today and he even sent me an email to thank me! So thank YOU for the recipe, and all the helpful reviews. I was able to make these with what I had on hand, except I used taco bell sauce. I had like a zillion packets. I highly reccomend trying them with Taco Bell sauce, a bottle of it is like a dollar.

    I found it a bit bland, but that may have something to do with using ground turkey instead of beaf, I will kick up the seasoning next time. I really liked the texture the flour and water give it. Next time I'll add cheese to the tortilla roll and possibly black beans. This will become a regular meal for us I think because I can make a lot at once and freeze individual portions

    This was a great recipe...and I was shocked when I figured out I never even had to turn the oven on! What...it is all microwavable...AWESOME! These were very good. I used la Victoria enchilada sauce since I could not find red chile (looks like a good idea based on the past reviews). We agreed that this would probably freeze well and may give that a shot next time! Excellent recipe. Thanks Little bee!

    I'm really surprised at how much we liked this. DD & I LOVE Taco Bell, but DH isn't much of a fan. I did add about double the chili powder and paprika and used fresh onion and garlic. I also mixed the beans right in with the meat. I split the recipe between 2 pans so I could freeze one. I was able to fit 5 in each, with meat left over, so I mixed the sauce into the leftover meat and spooned that over the top. I really wasn't looking to duplicate the taste of TB enchiritos but I wanted something similar. This was better than the real thing, Thanks!
