Broccoli Potatoes

This is quite a common way of doing potatoes but I thought I would send it in anyway. Sometimes I do the recipe up until the final baking step and then just pop them in the oven 25 min before serving dinner

SERVES 4 (change servings and units)

Ingredients

    Preheat oven to 425°F.
  2. 2
    Prick the scrubbed potatoes and bake for about 1 hour (Until tender).
  3. 3
    Cool on a rack for about 15 min (do not turn off the oven).
  4. 4
    Meanwhile steam the broccoli for 5 minutes.
  5. 5
    Slice each potato in half and gently scoop out most of the flesh leaving the shells in tact.
  6. 6
    In a blender or food processor, using the metal blade, combine the potato flesh, sour cream, broccoli, green onion, garlic, salt& pepper.

    Process until smooth.
  8. 8
    Spoon the potato mixture into potato shells.
  9. 9
    Place on a baking sheet.
  10. 10
    Bake until heated through about l5 to 20 minutes.

    Serve immediately.

This is a great recipe. I had some back ribs out that I had to cook tonight, and was wondering what to make with them. So, of course, I turned to RECIPEZAAR and found another "GREAT" side dish. I did, however, mash the ingrediants instead of processing them and added some cheddar cheese for the last 10 minutes.They turned out "awsome". My wife loved them and she's very happy that I've discovered new dishes at RECIPEZAAR. Thanx Bergy !! I'll be serving these many more times. Rob

    We loved these. I used about two+ cups steamed broccoli (leftover from the night before) so mine were VERY green. I subbed garlic salt for the garlic and salt. I also added some jack and cheddar cheddar cheese.

    These were great! I made then up on Sunday night and did everything except bake them the second time. Came in from work Monday evening and popped them in the oven and served hot with some veggies--we didn't even need any meat! I love quick easy meals like this.

    Not so common, never saw this one before although ingredients are common hadn't thought of putting together. Thanks for sharing Served it with Mom's Meatloaf (by Mary in NJ) It complimented the meatloaf and was a great dinner!
