Healthy Fish Tacos With Chipotle Cream

I think I got this recipe from Cooking Light and have made it several times for customers of mine who are watching their weight. They loved it and always requested it again.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Mix the first three ingredients to make a sauce and set aside in a bowl.
  2. 2
    In a skillet, saute for 5 minutes the next 8 ingredients (butter through cilantro) Add the fish, cover and cook 3 minutes or until opaque.

    Remove from heat and stir in lime juice and zest.
  4. 4
    Have any additional condiments in seperate bowls and let each person"build" their own tacos.

I've tried alot fish taco recipe cause dh LOVES them. I used frozen cod and powdered chipotle pepper. for the sauce, I used light sour cream and I added some chopped cilantro and lime juice. This was FANTASTIC. My favorite by far. Thank you!

    Flavor galore and I loved it! I have never had the pleasure of having a fish taco at a restaurant and I've heard so much about them and have been wanting to try one. The flavors were just so very good and the recipe was so easy to prepare. I will definitely be making these often and I thank you for introducing me to them.

    These are so wonderful!! I used full fat sour cream and 2 Tbl of just the adobo sauce without the chipotles, as my daughter and grandson don't like their heat. It still had that wonderfully smoky flavor and I did add some chopped chilis to my portion. I also toasted some corn kernels, used the chopped tomatoes & scallions, and we sprinkled on some shredded cheddar. This time I used flour tortillas, but I want to try this with fresh corn tortillas, also. Next time I'll also make sure to have some finely shredded cabbage and black beans on hand. This is truly a perfect recipe...a cinch to prepare with readily available ingredients, versatile, makes your house smell incredible while cooking, is very good for you, and best of all tastes heavenly. Thanks crispychick, for a real winner. Try this, everyone...it's a 'close your eyes and moan' kind of recipe.

    We loved these fish tacos. I used low-fat sour cream instead of nonfat. I also just used the adobo sauce and left out the chipotle chiles and it was still spicy enough for us. I forgot to add the lime zest and lime juice at the end and they were still wonderful. Next time, and there will be a next time, I won't forget to add. I mixed the sauce with the shredded red and green cabbage. Served these with a side of Cuban Black Beans.
