Simple Tex-Mex Rice

Living in Texas, my family loves Tex-Mex and Mexican food. I always seem to have a hard time finding a rice recipe that my whole family can agree on. I came up with this recipe on my own and everyone seems to like it.
SERVES 4
Ingredients
- 2 cups water
- 1 cup long-grain rice
- 2 tablespoons taco seasoning
- 1 tablespoon butter
- 1 teaspoon chicken bouillon
Directions

Combine all ingredients in a medium-sized saucepan.2
Heat over medium-high heat until water begins to boil.3
Cover saucepan with tight fitting lid, and reduce heat to low.4
Cook over low heat for 15 minutes without removing lid or stirring.5
After 15 minutes, remove lid and fluff rice with a fork.6
~NOTE~The amount of taco seasoning can be adjusted to your taste. I use Penzey's "bold taco seasoning".

Quick and easy to put together! I put all in my rice cooker double everything but the water. Once all ingredients was in I pour chicken broth in about 1 inch above the rice. Walla! Perfect. I served for Father`s day part of my Fathers Day TEX-MEX. Sorry I didn`t get a picture as my guest had it gone in no time. Thanks Kim.

Skipped the butter and used 1tsp of olive oil. Really, really tasty with El Pollo Loco Avocado Sauce. Made it with brown rice with appropriate cooking time and water amount.

Raves from my teenager! This rice is superb! I "fried" the rice in the butter first and it was oh sooo good! Thanks for sharing such an easy recipe. I would have never even thought of using taco seasoning in this way.
