I experimented with various spices to finally attain what I think is the next best thing to pork sausage. Be sure to use regular ground turkey (not ground turkey breast, which is too lean so it doesn't have enough moisture). UPDATE: After all the positive reviews, I decided to submit this to Taste of Home's Light & Tasty and they published it in the Dec/Jan 2008 issue. It's also in the Light & Tasty Annual Recipes 2008 Cookbook.

SERVES 4 -6 (change servings and units)

    Combine all ingredients (use less pepper if you don't want a spicy taste) and blend well.
  2. 2
    If time permits, refrigerate overnight to let the meat absorb the flavor of the spices.
  3. 3
    Form into patties and cook as needed, freezing leftovers.
  4. 4
    Don't overcook or they will dry out--remove from the heat as soon as they're no longer pink inside, but still juicy. (if you prefer a moister texture, you add a splash of olive oil or an egg to the mixture just prior to cooking).

This is awesome sausage!! I especially appreciate it because I am able to buy kosher ground turkey, add the spices and voila a whole new culinary world! Due to personal preference, I cut the black, white and red pepper quantities in half; the rest was exactly as written. Thank you, Picholine for sharing this truly GREAT sausage!

    Wow these smell amazing when cooking. I gave it 4/5 rating b/c i found it Spicy it was the fennel that did it so next time i'll grind them up and use like 1/4 tsp! Thanks for posting!

    I'm so excited!! Homemade turkey sausage...no more paying big bucks for this treat! I agree that I might cut the salt a bit in the next batch (there will definitely be a next batch) but otherwise I'm very happy. My sweet BF hasn't had a taste yet but was fascinated when I told him about this and how good it was. Oh yeah...we're going to be munchin' on some sausage with a lot less guilt! Thanks.

    Very nice balance of seasonings. Next time I may cut the salt a little bit, but other than that I wouldn't change anything. The next day, I combined my leftover sausage with ground beef, bread crumbs, egg, and a little parsley and made some terrific meatballs.
