1 Minute, No Bake, Cereal Bar

My pantry is running very low on baking supplies, but I had a box of raisin-bran cereal that had too many raisins that I wanted to use up. So, I chose to adapt my other recipe: 1 Minute, No Bake, Cocoa Delicacy using what I had on hand. I think this turned out really nice and entirely different from the original version. I used peanut-hazelnut butter instead of peanut butter.

SERVES 25 (change servings and units)

Ingredients

Directions

    Mix cereals and spices in a bowl.
  2. 2
    In a saucepan (or microwave oven), bring milk, brown sugar, peanut butter and honey to a boil.
  3. 3
    Boil for 1 minute before removing from heat.
  4. 4
    Immediately add vanilla and cereal mix.
  5. 5
    Mix well.
  6. 6
    Pour onto cookie sheet lined with wax paper.
  7. 7
    Cover with another piece of wax paper.
  8. 8
    Flatten with a rolling pin, packing tightly.
  9. 9
    Cool completely.
  10. 10
    Cut into 25 rectangles.

Made as directed using 1 1/2 c of crushed raisin bran cereal. Tastes great and was surpisingly popular with the family. Only issue I had was this is so moist that it never sets up into bars that can be cut or served. After it set overnight, I ended up rolling into balls. Thanks for sharing the recipe! Made for PAC Spring 2009.
