" South Beach" Stuffed Bell Peppers

This is a recipe I made up when I was in Phase 1 of the South Beach Diet. My kids have begun to request it for supper!

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Wash the peppers, cut the tops off, and place in oiled glass dish.
  2. 2
    Cover and microwave the peppers for 5 minutes.
  3. 3
    Saute the veggies and ground turkey with a dollop of olive oil. (I chop up the usable remainders of the pepper tops as well).
  4. 4
    Add the tomatoes and cook for 3-4 minutes to evaporate some of the liquid.
  5. 5
    Stuff the peppers and top with cheese.
  6. 6
    Bake at 350 for 10 minutes or until the peppers are soft and the cheese is toasted.
  7. 7
    Add Ins: you could add cooked rice or stir in extra cheese to the mixture before baking.

These were very, very good! I also chopped up some fresh spinach and added it to the veggie mix. I used Penzey's Northwood Fire instead of the Spike. I blanched the peppers first rather than microwaving them. This recipe is so good that it really hides that not so great ground turkey aftertaste. Delicious!

    We absolutely loved these stuffed peppers! Made them exactly as the recipe said except I hade no Spike seasoning so I had to improvise. We will absolutely be making these again...
