" Loaded " Deviled Eggs

My Icelandic hubby loves deviled eggs ... especially this version. Leftovers are required as he likes the bacon/egg flavors with his breakfast cereal & coffee. I went through a lot of devilled egg recipes posted here to be sure it wasn't a duplicate & got some new ideas to try for him, but I'm sure this will stay his favorite. As the ingredients & name imply, the recipe takes the "loaded baked potato" approach to devilled eggs.

SERVES 12 , 24 halves (change servings and units)

Directions

    Transfer egg yolks from halves to mixing bowl & combine with remaining ingredients.
  2. 2
    Add the sour cream or buttermilk last & use more as needed to reach desired smoothness.
  3. 3
    Spoon yolk mixture into halves. The bulk will have grown substantially, so pile it high & "dust" with a sprinkle of paprika.

Nice flavors, but we all agreed the crunch of the bacon reminded us of eggshells, so next time I will put the bacon on the top as a garnish. Thank you for sharing!

    These are very different from my usual deviled eggs. They are quite dense, and the bacon adds a very unique flavor. They got mixed reviews from my "taste-testers", but I think it is because they are so set on what they feel a deviled egg should taste like. But I liked them, although I think I may add a touch of horseradish next time. Thanks for posting! Made for Football Tag!

    There goes my secret! I make this recipe except that I substitute Dijon mustard for the vinegar. This always goes so fast at parties. Everyone loves the bacon flavor. Sometimes if I'm making it for the adults I'll sprinkle it with chili powder instead of paprika.

    These are good eggs. I think the hard part in both of twissis' deviled egg recipes are getting past that they are different than regular deviled eggs. The flavor was a tad bland and the mixture was very thick. I did add a little mayo after I tasted them. I did add the crumbled bacon in the mix, but you can't tell it by my pic because I used some bacon as a garnish. I used the sour cream, but if I make these again I will try it with the buttermilk to see what flavor that adds. I do like the bacon added to the eggs. I picked this recipe for PAC Spring 2006. Thanks twissis!
