Lots of fun! I didn't have any foil liners, so I baked them in the tin. I then took them out, patted off the grease and stuck them in paper liners in a different muffin tin. That worked except when I took them out of the pan. The paper came off just a little. If my kids weren't so small, it might have given away some of the surprise. The meatloaf was superb--a real kid-pleaser.

How fun. I made these for April Fools Day along with Snakes on a stick and green beans. When we all sat down at the table my kids thought I had lost it that there was no meat. Then when their dad took a "cupcake" my 4 yr old started to scold him for taking dessert....lol. DH and I had so much fun with this and the kids loved it. When they finally realized what it was they were squealing with laughter. My DD's already asked me to make these for their slumber parties...lol. Thank you for such a fun fun fun meal, and a great way to celebrate " April Fools Day " Stephanie

These were soo good! They were really cute and colorful for April Fool's Day, yes, but this was also really good meatloaf! It was just bursting with flavor and so moist! I did have to cook about 8 minutes extra, but that's ok! The kids loved having the colorful leftover mashed potatoes on the side too. One note: This isn't a big deal, but I did find that the "cupcakes" pulled away from the cupcake liners as they baked, so these didn't look quite like cupcakes, but it was close enough! And definitely follow the recipe instructions and use foil cups...all I had were paper ones, and beside grease seeping through them, we had to be careful that none of the paper stuck to the "cupcakes" when we took them off. Great recipe! Thanks!
