Blender Quiche - or the Whatever You Have in Your Kitchen Leftov

The great part is you can use whatever leftovers (well...almost) you have on hand. This dish can be served hot or cold. Freezes very well! Use any cheese of your choice.

SERVES 6 (change servings and units)

Ingredients

    Preheat oven to 350°F.
  2. 2
    Generously grease a 9 inch pie pan.
  3. 3
    Spread shredded cheese across bottom of pie pan.
  4. 4
    Cover cheese with meat and vegetables.
  5. 5
    In a blender, combine eggs, baking mix, salt, garlic powder, onions, parsley, and milk.

    Blend until smooth, then add olive oil.
  7. 7
    Blend until combined, then pour mixture over meat and vegetable layer.

    Sprinkle with paprika.
  9. 9
    Bake in preheated oven for 40 minutes.

    Cool 10 minutes before serving.

I made one with crust and one without. The one without crust was better and, after-the-fact, it's obvious why - the baking mix makes it perfectly unnecessary! It's a delightful recipe. I only had frozen meatballs for the meat and it was awesome. It kinda tasted like a meatball sub, but without tomato sauce. Yumm. Thank you!

    Very good! My family really enjoyed it. I used real onions, so I left out the onion flakes. I had no parsley, so I put in some ground coriander. I also reduced the oil to 1/4 cup as a chef below suggested and it was perfect. I had to cook it 10 minutes longer to finish it. Overall it was easy and yummy!

    I found this recipe to be amazing . I had never made quiche before and I was happy with how simple it was to make. I didnt quite understand what baking mix was so I used bisquick. I also had no vegtables in the house except frozen corn and the only meat I had was what was left from my Quiznos sandwich that day. I used real onion instead of flakes and still came out with an amazing supper that my husband couldnt keep his hands off. I guess that proves this really is the leftovers quiche and nomatter what you use its definitly something to add to your cookbook

    My husband and I love this recipe. It uses regular milk, a real plus. I made it with bacon, swiss cheese, spinach, mushrooms, and red bell pepper bits for color. Used chopped red onions instead of dry. Didn't have to buy or make a crust. It was perfect. Thanks for a great recipe!!!
